Ingredients
1 Eggplant (Big, Round and Lightweight)
1 Yellow Squash
1 Zucchini
1 Yellow Squash
1 Zucchini
2 Onions
1/2 Bell Pepper
1/2 Red Pepper
1 Teaspoon Black Pepper
1 Teaspoon Paprika
1 Teaspoon Salt
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
1/2 Bell Pepper
1/2 Red Pepper
1 Teaspoon Black Pepper
1 Teaspoon Paprika
1 Teaspoon Salt
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
2 Tablespoons Roast Vegetable Seasoning (available at most farmers markets)
10 leaves of Basil
Red Chili Flakes
Oil
Oil
3 Handfuls of Shredded Mozarella Cheese
1 Box of Barilla Oven-Ready Lasagna Sheets
1 Bottle of your favorite pasta sauce. (I use Vodka Sauce)
Method - Preparation & Cooking Vegetables
1) Cut the Onions into Cubes and separate, cut the Bell Pepper and Red Pepper into Cubes and place into mixing bowl
2) Peel and Cut the Eggplant, Squash, Zucchini into Round coins about 1/2cm thick. and place into a separate mixing bowl
3) To each of these bowls add half of these quantities to the bowls: Black Pepper, Paprika, Salt, Onion Powder, Garlic Powder, Roast Vegetable Seasoning and some oil (Feel free to add more of any of these seasonings if you like a lot of flavor.
4) Preheat the oven to 450 degrees.
5) Empty the bowl that has the Onions and Peppers into a Oven tray (Lined with Foil paper)
6) Empty the bowl that has the Zucchini, Eggplant ... into another Oven tray (Lined with Foil Paper).
You want the trays to only have a single layer of vegetables so you may need to make multiple trays and cook vegetables in separate batches.
7) Once the oven is preheats cook both trays for 20 minutes at 450 degrees.
8) After 20 minutes turn the vegetables over and cook for another 15 minutes.
Method - Putting the Lasagna Together
9) Take a nice deep Lasagna Dish. Layer it with a big spoon of Pasta Sauce.
10) Put a Layer of the Pasta Sheet on top of the sauce so the bottom layer is covered. Feel free to break the sheet if needed, all broken bits can be used to cover the lasagna.
11) Add a thin layer of all your vegetables on top of the Sheets
12) Sprinkle some pepper over the vegetables and some basil leaves for added flavor.
13) If you like it spicy then sprinkle some Red Crush Chili Flakes over this layer of Lasagna
14) Add another big spoon of Pasta Sauce
15) Repeat steps 10 - 14 again
16) Add another layer of Pasta Sheets to your Vegetables.
17) Add a more Pasta Sauce on top of the Sheets
18) To finish it off top the lasagna with Shredded Cheese.
19) Cover the dish with foil paper and place the lasagna in the oven for 20 minutes or so until the Sheets soften, and the cheese melts.
